  • 1 aubergine
  • 7 mushrooms
  • 1 clove garlic
  • Required amount of blue cheese
  • Cooking cream

How to make the crepes?

  1. In a bowl, place the flour, the egg and little by little the milk.
  2. Mix well and pour in the salt and water so that it is somewhat runny.
  3. In a pan, place a small slice of butter and when it melts, pour a tablespoon of the mixture.
  4. Let it cook on one side and then you have to turn it over.
  5. Repeat until you finish with all the mixture.

  1. Cut the peeled aubergine and mushrooms into slices.
  2. Cut the garlic as finely as possible.
  3. In a frying pan, heat a little olive oil and sauté the garlic first, then add the slices of aubergines and mushrooms.

  5. Pour in a splash of cream and remove from heat until the liquid is absorbed and the cheese is melted.

Ingredients

For the mass:

  • A cup of flour
  • A cup of milk
  • 1 egg

  • 1 onion
  • 1 aubergine
  • 300 grams of bechamel

Steps to follow to make savory crepes

  1. To make the crepes you have to place all the ingredients in the blender and mix until you get a homogeneous paste, without lumps.
  2. Let it rest for an hour in the fridge.
  3. Then, you can start cooking the crepes: you have to place a little butter in a non-stick pan and when it has melted, pour a large spoonful of the crepe batter. Pay attention that they are not too thick.
  4. When it’s no longer stuck to the pan, turn and let it brown on the other side.

How to make the filling?

  1. Peel and cut the eggplant into strips, the same as the onion.
  2. In a frying pan with a little oil, sauté the onion and then the aubergine over low heat, until they start to brown.
  3. Cut the mushrooms into thin slices and add to the sauce, season with salt and pepper to taste.
  4. When everything is tender, add the béchamel sauce and lower the heat to a minimum for a few minutes, to reduce it. Cover the pan, in this way the flavor is more concentrated.
  5. Add grated cheese and mix to melt.
  6. Reserve to cool and meanwhile, remove the cream from the crepes and start preparing them.
  7. Fill the crepes with one or two tablespoons of the mushrooms, the aubergines and the béchamel sauce.
