Recipe: Gratin Cheese Dumplings

Ingredients

  • 900 g of minced meat (beef, pork or mixed)
  • 2 slices of bread
  • 2 tablespoons dried oregano
  • ½ teaspoon cumin seeds
  • ½ small red chilli, dried
  • 1 teaspoon minced fresh rosemary
  • 1 egg yolk
  • 4 tablespoons of olive oil
  • Ketchup
  • 1 cup of mozzarella cheese, grated or chopped
  • 1 cup of grated Parmesan cheese
  • 2 bunches of fresh basil, well chosen and chopped
  • 1 onion (optional)
  • 1 clove of garlic (optional)
  • Salt and black pepper
  • 1 teaspoon olive oil (optional)
  • 1 teaspoon Dijon mustard sauce (optional)

Meatballs with Parmesan cheese

For the tomato sauce

  • 1 large garlic clove
  • 5 tablespoons of olive oil
  • 1 small chilli, dried
  • 2 teaspoons dried oregano
  • 3 cans of Italian pear tomatoes (400g each can)
  • 1 tablespoon of red wine vinegar
  • 1 bunch of basil
  • Salt and black pepper

Process

From the tomato sauce

Tomato sauce for meatballs with gratin cheese

  • First, you have to mince the garlic well and chop the chilli.
  • Then fry the garlic with two tablespoons of oil in a medium saucepan and add the oregano and pear tomatoes.
  • Next, mix the ingredients slowly, taking care not to break the tomatoes, because the seeds make the sauce bitter. It is important that the tomatoes remain whole until the end so that the sauce remains sweet.
  • Then bring to a boil for a few seconds and sauté over low heat for 1 hour.
  • Then add the vinegar, mix well and go through the blender so that everything is well chopped.
  • Finally, add the basil, season and add the rest of the olive oil.

From the meatballs

Preparation of gratin cheese dumplings

  • First place the minced meat in a bowl.
  • Then, with a food processor or a hand mixer, crush the bread slices until they form crumbs.
  • Next, mix the minced meat with the breadcrumbs, the dried oregano, the cumin, the chilli, the rosemary, the egg yolk, two teaspoons of salt and a pinch of pepper.
  • Optionally, you can chop an onion and a clove of garlic. Then, you have to fry them in a pan and add them to the meat mixture along with 1 teaspoon of olive oil and another of Dijon mustard.
  • Then mix everything well until there is a uniform dough and the ingredients are well distributed. Then, with clean and damp hands, take small portions of meat and form balls.
  • These balls can be fried immediately or kept in the refrigerator for a day, covered with cling film.
  • On the other hand, preheat a heavy-bottomed skillet. Add two or three tablespoons of olive oil and stir so that it spreads well on the bottom.
  • Then fry the meatballs until they are toasted on all sides, turning them carefully not to break them.
  • Reduce the heat and pour the meatballs into a baking dish.
  • Then add the tomato sauce on top, abundant chopped basil leaves and sprinkle with mozzarella and grated Parmesan to taste.
  • Finally, bake at 200ºC for 15 or 20 minutes until the cheese has melted.
