Delicious Chicken Stewed In Grandmother’s Style

Traditional cuisine allows us to enjoy delicious dishes whose recipes have been passed down from generation to generation, with all the variations and improvements accumulated over the years. In this case, we show you a recipe to prepare grandmother’s style stewed chicken.

Chicken stewed in grandma’s sauce

Chicken recipes always have a place in balanced and healthy meal plans. This type of white meat is considered one of the healthiest since, compared to other meats, it is lower in fat and calories.

In addition, according to research published in Food & Nutrition Research , it has highly digestible proteins (with low levels of collagen), unsaturated lipids, B vitamins and minerals such as iron, zinc and copper.

Now, another great advantage is that it is a very versatile food that can be prepared in multiple ways. In this case, we propose to cook it with a traditional grandmother’s sauce. It is delicious!

Ingredients

  • 1 whole chicken, chopped (about 2.5 kg)
  • 1 branch of laurel
  • Salt to taste)
  • 1 head of garlic
  • 1 drizzle of olive oil
  • Black pepper (to taste)
  • 1 cup of white wine (250 ml)
  • 1 tablet to prepare chicken broth (1 gram)

Chicken.

Preparation

  • First of all, it will be important that the chicken is well cleaned and chopped. If you don’t want to use a whole chicken, you can cook this chicken in sauce recipe using only the sliced ​​thighs, as they are one of the juiciest parts.
  • Once the chicken is clean and chopped, we pour a drizzle of olive oil into a low pot and heat it. When it is hot, add the whole garlic and the bay leaf. We let them fry for one or two minutes, after this, we add the chicken pieces, seasoned to taste. We will let the whole cook until the chicken is golden all over.
  • So that the garlic does not burn but release all the flavor, a good trick can be to throw them in the pan with their skin and make slightly deep cuts.
  • Once golden brown, mix the glass of wine with a little water and add all the liquid to the pot. The idea is that the chicken is covered halfway, so that the stew is prepared correctly.
  • Next, we crumble the pill to prepare chicken broth and pour it over the mixture. Afterwards, stir a little and keep cooking over low heat with the pot covered until the sauce is reduced and thickened to taste.
  • With this, the stewed chicken will be ready: with a very simple recipe and without the need for complicated ingredients to obtain. We can serve it in deep plates with a garnish of roasted potatoes or white rice.

Stewed chicken with vegetables

As a variant of the previous recipe, we show you a way to prepare stewed chicken, also with a very traditional style, but this time with added vegetables. Without a doubt, vegetables are ideal foods for the diet, since they are a source of important nutrients such as vitamins, minerals and antioxidants.

Ingredients

  • 1 whole chicken (about 2 kg)
  • 1 onion
  • 2 cloves of garlic
  • 1 red bell pepper
  • 1 cup of crushed tomato (250 ml)
  • 2 bay leaves
  • 1 green bell pepper
  • 1 teaspoon of chopped parsley (3 g)
  • ½ cup of white wine (125 ml)
  • 1 tablet to prepare chicken broth
  • 4 cups of water (1 liter)
  • Extra virgin olive oil (to taste)
  • Salt and black pepper (to taste)

Preparation

  • First, we cut the chicken and reserve the breasts and thighs.
  • On the other hand, we prepare the chicken broth with the water and the concentrate tablet.
  • Once the broth is ready, we cook the chicken in it for about an hour, over low heat.
  • After this, we season the chicken and put it in a casserole with very hot olive oil. We will seal all its faces, without letting it cook inside.
  • Once it has acquired some color, we remove it and lower the heat. In that same oil, add the onion, pepper and garlic, and fry it for about 5 minutes.
  • After this time, we add the crushed tomato and the bay leaf, and mix all the ingredients well. Then, we will let everything cook for about 10 more minutes.
  • When the tomato has been reduced to about half, add the white wine and let the liquid reduce again.
  • When we have this mixture ready, we add the chicken pieces, so that they are covered by the sauce. At this time, we will let the whole set cook over medium heat for about 40 minutes, until the chicken is tender.
  • So we will have ready this second variant of the traditional stewed chicken, which we can serve with the vegetable garnish, and decorate with a little chopped parsley sprinkled on top of the plate.
